We eat a bit of salad.
Which probably isn’t saying anything. Except that it isn’t the lettuce we can’t get enough of, as it is the dressing we douse it with.
It’s like the going to the beach in Washington. A win. But then there’s going to the beach in say, Hawaii. And suddenly…the beach just got better.
Same with this dressing. Salad just got better.
So what happened is a friend gifted me a bottle of her homemade dressing for my birthday. I’d never heard of such a thing. Salad dressing. For a birthday. But then I’d never received such a thoughtful gift.
Which is how I present it to you. As a gift. If you’re still choking down salad because you think you’re supposed to, or if you’re just looking for something to give your salad a pick-me-up, this may be the dressing to do it.
Here’s what we need–none of it fancy: olive oil, balsamic vinegar, spicy brown mustard, honey, salt, black pepper, and a garlic clove.
We start with 3/4 cup olive oil.
Then add to that 1/4 cup balsamic vinegar.
If you’ve got a glass 2 cup measuring container, it’s just a matter of pouring to the right line.
Add to the oil and vinegar, 1 Tablespoon spicy brown mustard.
Two Tablespoons honey.
And 1/2 teaspoon each of salt and pepper.
Then to the rest, squeeze in one fresh garlic clove.
In the same container, we’ll whisk the dressing around until the honey is unstuck from the bottom and we can’t see the mustard anymore.
I suppose we could store the dressing even in our Pyrex if we had nothing else.
It sure does look pretty in a bottle. This one I repurposed when I drained the last of our olive oil.
And here it is, after some lousy pouring.
Ready to enjoy.
THE Salad Dressing
3/4 cup olive oil
1/4 cup balsamic vinegar
2 Tbsp. honey
1 Tbsp. spicy mustard
1/2 tsp. salt
1/2 tsp. black pepper
1 garlic clove minced
Whisk ingredients together. Store in a lidded bottle or container in the refrigerator. Pour over salad. Enjoy every bite of lettuce from this day forward.
Works also as a marinade. For anything. And great over rice.
